I Made This: Cookies, Sauce & Champagne Chicken

More recipe reviews!  Surprise: more cookies in the list!  I know, you’re probably shocked.

1.  The best chocolate chip cookies ever.  Turns out, I like to bake chocolate chip cookies.  Or maybe I just like to eat chocolate chip cookies, because the last round-up of reviews I did featured not one, but two chocolate chip cookie recipes.

In a competition, this recipe is probably my favorite for a few reasons: simplicity, flavor and texture. Second would be the brown butter sea salt cookies I made a few weeks ago, for the same reasons but they’re a little more difficult with the butter-browning stage.

For this recipe, I used coarse sea salt and it made all the difference.  They’re sweet and chewy with a little crunch of salt that compliments the sweetness every now and then. So, so delicious.

2.  Homemade Pizza Sauce:  I won’t even bother with the obvious awesome that is pizza, in a general sense.  Instead, I’ll tell you that the Publix pizza dough (from the refrigerator in the bakery) is one of the bes things to happen to Sunday evenings in a very long time.  We love making our own pizzas, but the jarred sauces are, well, lacking.  I’ve tried spicing them up but the general flavor is so bland, it’s hard to mask.

Enter this easy homemade pizza sauce.  It’s cheap, quick, and incredibly delicious.  Good sauce makes all the difference, and this is fantastic.   I usually make the full batch, then freeze whatever we don’t use in the first night for the next time we make pizzas.   I’ll never buy a jar of sauce again.

I have worked at three - yes, three - different pizza places in my early years, so have a discerning palate and professional technique.  You can trust me on this one.  Make the sauce.

3.  Carrabba’s Champagne Chicken:  I cannot wait to make this again. It was devine.  Probably not the healthiest meal I’ve eaten, but I have a feeling it’s at least a little more healthy than the version at the restaurant.  The bonus? You end up with an almost full bottle of champagne to drink with the meal.  Everyone’s a winner.
