I Made This: Granola Bars, Fish Sticks & Ribs

I love finding new recipes and new family favorites!!  This week, I found three recipes that are definitely moving into the normal rotation.

  1. No-Bake Granola Bars from Two Peas and Their Pod.  These were so delicious that I made them twice.  The first batch disappeared at an impromptu Sunday get-together, so I had to make another batch the next day so I could send them in my daughter’s lunches as I’d intended. Unfortunately, my daughter didn’t love these as much as we did, but my husband dutifully devoured the second pan over the weekend. They’re really easy and delicious and we generally have all of the ingredients on hand, so they make a good snack.
  2. Panko Crusted Fish Sticks from Blissfully Delicious:  I’m making an effort to incorporate a lot more fish and veggie nights into our weekday menu, and fish sticks are an easy way to prepare fish that almost everyone in the family will eat.  Tilapia was BOGO at Publix last week, so I bought some and made these easy fish sticks using panko bread crumbs, a mix of seasonings and salt/pepper. They were quick, easy and delicious – and made enough for a lunch the next day too.  I’ll be using this recipe again!
  3. Easy Babyback Ribs from AllRecipes.com:  Ribs were also on sale at Publix, so I bought three racks and used this recipe to make them.  I followed the advice of most reviewers on the site, and first removed the membrane from the back of the ribs, then applied a “sweet and smoky” rub that I had in my cabinet before dousing them in Sweet Baby Ray’s and wrapping them up in foil.

    These ribs make me wonder why I never made ribs before!  I put them in the oven at 250° for about 3 hours, then turn on the broiler and get them all crispy on the outside. They’re fall-off-the-bone delicious, and so easy to make.  I’ve made them 3 or 4 times now, and will make them again.
